2 slices hearty bread (sourdough or multigrain)
1 ripe avocado
1/2 cup feta cheese, crumbled
1 tsp fresh lemon juice
1 tbsp olive oil
Salt and black pepper to taste
Optional: red pepper flakes, cherry tomatoes, poached egg, microgreens
Toast the bread until golden and crisp.
Cut the avocado in half, remove the pit, and scoop flesh into a bowl.
Mash avocado with lemon juice and a pinch of salt.
