4 medium zucchini, sliced into 1/4-inch rounds
1 cup freshly grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon paprika
2 tablespoons panko breadcrumbs optional
1 tablespoon chopped fresh parsley optional garnish
Preheat oven to 425°F and line a baking sheet with parchment paper.
Arrange zucchini slices in a single layer on the baking sheet.
Lightly brush the tops with olive oil.
In a bowl combine Parmesan garlic powder salt pepper and paprika.
