Bang Bang Chicken Skewers feature juicy grilled chicken coated in a creamy sweet chili sauce with gentle heat. The skewers cook quickly and deliver tender texture with lightly charred edges.
1½ pounds boneless skinless chicken thighs
2 tablespoons soy sauce
3 cloves garlic minced
1 teaspoon sesame oil
1 tablespoon cornstarch
½ cup mayonnaise
⅓ cup sweet chili sauce
1 tablespoon sriracha
1 teaspoon rice vinegar
1 teaspoon honey
2 tablespoons sliced green onions
1 tablespoon sesame seeds

Cut chicken thighs into evenly sized cubes.
In a bowl combine chicken, soy sauce, garlic, sesame oil, and cornstarch.
Stir until the chicken pieces receive a thin coating and rest for 20 minutes.
In another bowl mix mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth.
Thread the marinated chicken onto skewers leaving slight space between pieces.
Heat a grill or grill pan to medium high and lightly oil the surface.
Cook skewers about 10 to 12 minutes turning occasionally.
Brush a thin layer of bang bang sauce onto the chicken during the final minutes.
Remove from heat and drizzle additional sauce if desired.
Sprinkle green onions and sesame seeds before serving.
