A hearty and flavorful meatloaf featuring melted cheddar and smoky BBQ glaze — perfect for family dinners or next-day sandwiches.

Ingredients

  • 2 lbs ground beef (80/20)

  • 1 cup shredded sharp cheddar

  • 1/2 cup BBQ sauce (plus more for glaze)

  • 1 cup plain breadcrumbs

  • 1/3 cup milk

  • 2 large eggs

  • 1/2 cup finely grated onion

  • 2 garlic cloves, minced

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.

  • In a large bowl, soak breadcrumbs in milk for 2 minutes.

  • Add beef, cheddar, eggs, onion, garlic, Worcestershire sauce, BBQ sauce, salt, and pepper.

  • Mix gently until combined. Shape into a loaf.

  • Brush the top with BBQ sauce.

  • Bake uncovered for 50–60 minutes, or until internal temp reaches 160°F.

  • Let rest for 10 minutes before slicing and serving.

Notes

For gluten-free: use GF breadcrumbs.

Add jalapeños or chili flakes for heat.

Great for leftovers and sandwiches.
