Tender beef tips simmered in a rich and creamy sauce, perfect for serving over mashed potatoes, noodles, or rice.

Ingredients

  • 1.5 lbs beef tips (sirloin or chuck), cubed

  • 1 medium onion, sliced

  • 3 cloves garlic, minced

  • 2 tbsp butter

  • 2 cups beef broth

  • 1/2 cup heavy cream or sour cream

  • 1 tbsp flour (or 1 tsp cornstarch + 2 tbsp water)

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard (optional)

  • 1/2 tsp dried thyme

  • 1/2 tsp paprika

  • Salt and black pepper to taste

Instructions

  • Season beef with salt, pepper, and paprika. Brown in butter over medium-high heat in batches. Set aside.

  • In the same pan, sauté onions until soft, about 7 minutes. Add garlic and cook 1 minute more.

  • Deglaze with Worcestershire sauce. Return beef to pan. Add broth, thyme, and mustard.

  • Simmer covered for 45–60 minutes until beef is tender.

  • In a small bowl, whisk cream and flour. Stir into the pan and simmer uncovered for 5–10 minutes until thickened.

  • Taste and adjust seasoning. Serve hot over potatoes, noodles, or rice.

Notes

Add mushrooms or swap cream for sour cream for tang. Store leftovers for up to 3 days or freeze for later.
