Tender beef tips simmered in a rich and creamy sauce, perfect for serving over mashed potatoes, noodles, or rice.
1.5 lbs beef tips (sirloin or chuck), cubed
1 medium onion, sliced
3 cloves garlic, minced
2 tbsp butter
2 cups beef broth
1/2 cup heavy cream or sour cream
1 tbsp flour (or 1 tsp cornstarch + 2 tbsp water)
1 tbsp Worcestershire sauce
1 tsp Dijon mustard (optional)
1/2 tsp dried thyme
1/2 tsp paprika
Salt and black pepper to taste
Season beef with salt, pepper, and paprika. Brown in butter over medium-high heat in batches. Set aside.
In the same pan, sauté onions until soft, about 7 minutes. Add garlic and cook 1 minute more.
Deglaze with Worcestershire sauce. Return beef to pan. Add broth, thyme, and mustard.
Simmer covered for 45–60 minutes until beef is tender.
In a small bowl, whisk cream and flour. Stir into the pan and simmer uncovered for 5–10 minutes until thickened.
Taste and adjust seasoning. Serve hot over potatoes, noodles, or rice.
Add mushrooms or swap cream for sour cream for tang. Store leftovers for up to 3 days or freeze for later.
