Juicy grilled chicken skewers marinated with garlic, lemon, olive oil, and warm spices. The chicken cooks quickly on a grill or in an oven, producing tender pieces with light char and aromatic flavor.
1 ½ pounds boneless chicken thighs or chicken breast
3 tablespoons olive oil
2 tablespoons lemon juice
3 garlic cloves finely minced
1 teaspoon paprika
½ teaspoon ground cumin
¾ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped parsley
Wooden or metal skewers
Cut chicken into evenly sized cubes about 1 to 1½ inches wide.
In a bowl combine olive oil, lemon juice, garlic, paprika, cumin, salt, and black pepper.
Add chicken to the bowl and coat thoroughly with the marinade.
Cover and refrigerate for at least 1 hour or up to 4 hours.
If using wooden skewers soak them in water for 30 minutes.
Thread marinated chicken pieces onto skewers leaving small gaps between pieces.
Heat grill or grill pan to medium-high heat and lightly oil the surface.
Grill skewers for about 10–12 minutes turning regularly until chicken is fully cooked.
Transfer skewers to a plate and rest briefly before serving.
Sprinkle chopped parsley and a squeeze of lemon juice before serving.
