4 slices bread
2 tablespoons basil pesto
4 slices mozzarella cheese
2 tablespoons butter
2 tablespoons Parmesan cheese
Spread pesto on two slices of bread.
Place mozzarella cheese on top.
Add optional tomato slices if desired.
Top with remaining bread slices.
Butter the outside of the bread.
Sprinkle Parmesan on the buttered surfaces.
Cook sandwiches in a skillet until golden and cheese melts.
