4 slices sourdough or Italian bread
4 tablespoons basil pesto
1 1/2 cups shredded low-moisture mozzarella cheese
2 tablespoons softened unsalted butter
2 tablespoons shredded Parmesan cheese optional
Pinch of black pepper optional

Instructions

  • Spread softened butter on one side of each bread slice.

  • Turn slices over and spread pesto evenly on the unbuttered side of two slices.

  • Top pesto with mozzarella and Parmesan, covering the surface evenly.

  • Place remaining bread slices on top, buttered side facing outward.

  • Heat a skillet over medium-low heat and place sandwiches in the pan.

  • Cook for 3 to 4 minutes until golden brown, then flip carefully.

  • Cook the second side for another 3 to 4 minutes until cheese is fully melted.

  • Remove from skillet, rest for 1 minute, slice, and serve warm.
