A gourmet grilled cheese featuring melted brie and a sweet blackberry balsamic filling on crisp toasted bread.
1 cup blackberries
1 tablespoon balsamic vinegar
1 teaspoon honey (optional)
4 slices sourdough bread
4 ounces brie cheese
2 tablespoons butter
1/2 teaspoon fresh thyme (optional)
Pinch of salt
Cook blackberries with balsamic vinegar in a small saucepan until softened.
Lightly mash berries and cook until slightly thick.
Spread butter on one side of each bread slice.
Place brie on unbuttered side of two slices.
Spoon blackberry mixture over the cheese.
Top with remaining bread slices, buttered side out.
Grill in skillet until bread is golden and cheese melts.
Slice and serve warm.
