Brown Sugar Glazed Meatloaf is a classic comfort dish featuring tender seasoned ground beef topped with a sweet and tangy brown sugar glaze that caramelizes beautifully in the oven.
2 pounds ground beef 80/20
1 cup plain breadcrumbs
2 large eggs
1/2 cup whole milk
1 small onion finely diced
3 garlic cloves minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme optional
1/2 cup brown sugar
1/2 cup ketchup
1 tablespoon apple cider vinegar
Preheat oven to 350°F and lightly grease a loaf pan or line a baking sheet.
Combine breadcrumbs and milk in a large bowl and let sit 5 minutes.
Add ground beef eggs onion garlic Worcestershire sauce salt pepper and thyme. Mix gently until combined.
Shape mixture into a loaf and place in pan or on baking sheet.
Mix brown sugar ketchup and vinegar until smooth.
Spread half of the glaze over the meatloaf.
Bake for 45 minutes then spread remaining glaze on top.
Continue baking 15 to 25 minutes until internal temperature reaches 160°F.
Rest 10 minutes before slicing.
