Brown Sugar Meatloaf features seasoned ground beef baked with a sweet and tangy brown sugar glaze that caramelizes on top.
2 pounds ground beef 80 percent lean
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 small onion finely chopped
3 cloves garlic minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 cup ketchup
1/2 cup packed brown sugar
1 tablespoon yellow mustard
Preheat oven to 350°F and prepare a loaf pan or baking sheet.
Mix breadcrumbs and milk and let sit 5 minutes.
Add ground beef, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently.
Shape mixture into a loaf and place in pan.
Stir ketchup, brown sugar, and mustard.
Spread half the glaze over the loaf.
Bake 40 minutes, then add remaining glaze.
Bake 20 to 25 minutes more until internal temperature reaches 160°F.
Rest 10 to 15 minutes before slicing.
