Brown Sugar Meatloaf features seasoned ground beef baked with a sweet and tangy brown sugar glaze that caramelizes on top.

Ingredients

2 pounds ground beef 80 percent lean
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 small onion finely chopped
3 cloves garlic minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 cup ketchup
1/2 cup packed brown sugar
1 tablespoon yellow mustard

Instructions

  • Preheat oven to 350°F and prepare a loaf pan or baking sheet.

  • Mix breadcrumbs and milk and let sit 5 minutes.

  • Add ground beef, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently.

  • Shape mixture into a loaf and place in pan.

  • Stir ketchup, brown sugar, and mustard.

  • Spread half the glaze over the loaf.

  • Bake 40 minutes, then add remaining glaze.

  • Bake 20 to 25 minutes more until internal temperature reaches 160°F.

  • Rest 10 to 15 minutes before slicing.
