A Tex-Mex inspired one-pan bake with layers of tortillas, seasoned beef, sour cream, cheese, and enchilada sauce. Easy to make and full of flavor, it’s a dinner favorite for any night of the week.
1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: chopped tomatoes, green onions, avocado, shredded lettuce
Preheat oven to 375°F. Lightly grease an oven-safe skillet.
Sauté onions in skillet for 2–3 minutes. Add garlic and cook for 30 seconds.
Add beef and cook until browned. Drain fat.
Stir in taco seasoning and water. Simmer for 2–3 minutes. Remove half of beef.
Place a tortilla in the skillet. Add beef, sauce, sour cream, and cheese.
Repeat layers, ending with a tortilla topped with cheese.
Bake for 20–25 minutes until golden and bubbly.
Rest 5 minutes before slicing. Add toppings and serve.
