A Tex-Mex inspired one-pan bake with layers of tortillas, seasoned beef, sour cream, cheese, and enchilada sauce. Easy to make and full of flavor, it’s a dinner favorite for any night of the week.

Ingredients

1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: chopped tomatoes, green onions, avocado, shredded lettuce

Instructions

  • Preheat oven to 375°F. Lightly grease an oven-safe skillet.

  • Sauté onions in skillet for 2–3 minutes. Add garlic and cook for 30 seconds.

  • Add beef and cook until browned. Drain fat.

  • Stir in taco seasoning and water. Simmer for 2–3 minutes. Remove half of beef.

  • Place a tortilla in the skillet. Add beef, sauce, sour cream, and cheese.

  • Repeat layers, ending with a tortilla topped with cheese.

  • Bake for 20–25 minutes until golden and bubbly.

  • Rest 5 minutes before slicing. Add toppings and serve.
