1 lb ground beef or beef/pork mix
½ cup breadcrumbs
1 egg
¼ cup grated parmesan cheese
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
Salt and black pepper, to taste
1 tsp Italian seasoning
1½ cups marinara sauce
1½ cups shredded mozzarella cheese
4 sub rolls
Olive oil, for cooking
Combine meat, breadcrumbs, egg, parmesan, garlic, parsley, salt, pepper, and seasoning. Mix gently and shape into 1½-inch balls.
Brown meatballs in a skillet with olive oil, about 6–8 minutes.
Simmer meatballs in marinara sauce for 15–20 minutes until fully cooked.
Toast sub rolls under the broiler for 1–2 minutes.
Layer sauce, meatballs, more sauce, and mozzarella in each roll.
Broil the assembled subs for 2–3 minutes until cheese is melted and bubbly.
Freeze extra meatballs in sauce for quick weeknight meals.
Add provolone or parmesan on top for extra richness.
