Tender homemade meatballs simmered in marinara sauce, topped with melted mozzarella, and tucked into toasted sub rolls for the ultimate cheesy meatball sub experience.

Ingredients

  • 1 lb ground beef or beef/pork mix

  • ½ cup breadcrumbs

  • 1 egg

  • ¼ cup grated parmesan cheese

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, chopped

  • Salt and black pepper, to taste

  • 1 tsp Italian seasoning

  • 1½ cups marinara sauce

  • 1½ cups shredded mozzarella cheese

  • 4 sub rolls

  • Olive oil, for cooking

Instructions

  • Combine meat, breadcrumbs, egg, parmesan, garlic, parsley, salt, pepper, and seasoning. Mix gently and shape into 1½-inch balls.

  • Brown meatballs in a skillet with olive oil, about 6–8 minutes.

  • Simmer meatballs in marinara sauce for 15–20 minutes until fully cooked.

  • Toast sub rolls under the broiler for 1–2 minutes.

  • Layer sauce, meatballs, more sauce, and mozzarella in each roll.

  • Broil the assembled subs for 2–3 minutes until cheese is melted and bubbly.

Notes

  • Freeze extra meatballs in sauce for quick weeknight meals.

  • Add provolone or parmesan on top for extra richness.

  • Toasted bread prevents soggy sandwiches.
