This Cheesy Meatloaf Casserole layers savory meatloaf, creamy mashed potatoes, and melty cheddar cheese into one delicious, comforting dish.
1½ lbs ground beef
1 small onion, finely chopped
2 garlic cloves, minced
2 eggs
3/4 cup breadcrumbs
1/3 cup milk
1 tbsp Worcestershire sauce
1/4 cup ketchup
Salt & pepper to taste
Mashed Potatoes
2 lbs potatoes, peeled & chopped
1/2 cup milk
3 tbsp butter
1/4 cup sour cream
Salt & pepper to taste
Topping
2 cups shredded cheddar cheese
Preheat oven to 375°F. Grease a 9×13” baking dish.
Sauté onion and garlic in butter until soft.
In a bowl, combine ground beef, cooked onion/garlic, eggs, breadcrumbs, milk, Worcestershire, ketchup, salt, and pepper. Mix gently.
Press mixture into the baking dish. Bake for 25 minutes.
Boil potatoes until tender, then mash with milk, butter, sour cream, salt, and pepper.
Spread mashed potatoes over baked meatloaf layer.
Top with shredded cheddar cheese.
Return to oven and bake 15–20 minutes until cheese is melted.
Optional: Broil 2–3 minutes for golden topping. Let rest before serving.
Add vegetables or herbs to the meat layer.
