This Cheesy Meatloaf Casserole layers savory meatloaf, creamy mashed potatoes, and melty cheddar cheese into one delicious, comforting dish.

Ingredients

  • lbs ground beef

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 2 eggs

  • 3/4 cup breadcrumbs

  • 1/3 cup milk

  • 1 tbsp Worcestershire sauce

  • 1/4 cup ketchup

  • Salt & pepper to taste

Mashed Potatoes

  • 2 lbs potatoes, peeled & chopped

  • 1/2 cup milk

  • 3 tbsp butter

  • 1/4 cup sour cream

  • Salt & pepper to taste

Topping

  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 375°F. Grease a 9×13” baking dish.

  • Sauté onion and garlic in butter until soft.

  • In a bowl, combine ground beef, cooked onion/garlic, eggs, breadcrumbs, milk, Worcestershire, ketchup, salt, and pepper. Mix gently.

  • Press mixture into the baking dish. Bake for 25 minutes.

  • Boil potatoes until tender, then mash with milk, butter, sour cream, salt, and pepper.

  • Spread mashed potatoes over baked meatloaf layer.

  • Top with shredded cheddar cheese.

  • Return to oven and bake 15–20 minutes until cheese is melted.

  • Optional: Broil 2–3 minutes for golden topping. Let rest before serving.

  • Add vegetables or herbs to the meat layer.

  • Swap in sweet potatoes or turkey for variations.
