This Cheesy Meatloaf Casserole is a layered comfort food classic — seasoned ground beef, a rich tomato glaze, fluffy mashed potatoes, and melted cheddar cheese baked to golden perfection.

Ingredients

  • lbs ground beef

  • ¾ cup breadcrumbs

  • 1 egg

  • ½ cup finely chopped onion

  • 2 cloves garlic, minced

  • 2 tbsp Worcestershire sauce

  • ⅓ cup ketchup (plus extra for topping)

  • 1 tsp salt

  • ½ tsp black pepper

  • 3 large russet potatoes, peeled and cubed

  • 3 tbsp butter

  • ½ cup milk

  • 1½ cups shredded cheddar cheese

  • Optional: sour cream or cream cheese for mashed potatoes

Instructions

  • Preheat oven to 375°F. Grease a 9×13″ baking dish.

  • Mix ground beef, breadcrumbs, egg, onion, garlic, Worcestershire, ketchup, salt, and pepper.

  • Press into the baking dish. Spread extra ketchup on top.

  • Bake for 25–30 minutes. Drain excess grease.

  • Meanwhile, boil and mash potatoes with butter, milk, salt, and optional sour cream.

  • Spread mashed potatoes over meat layer. Top with shredded cheese.

  • Return to oven and bake 15–20 minutes, until cheese is melted and bubbly.

  • Let rest 10 minutes before serving.

Notes

  • Add cooked carrots or mushrooms to meat mixture for extra nutrition.

  • Swap cheddar with Colby Jack or mozzarella.

  • For convenience, use pre-made mashed potatoes.
