This Cheesy Meatloaf Casserole is a layered comfort food classic — seasoned ground beef, a rich tomato glaze, fluffy mashed potatoes, and melted cheddar cheese baked to golden perfection.
1½ lbs ground beef
¾ cup breadcrumbs
1 egg
½ cup finely chopped onion
2 cloves garlic, minced
2 tbsp Worcestershire sauce
⅓ cup ketchup (plus extra for topping)
1 tsp salt
½ tsp black pepper
3 large russet potatoes, peeled and cubed
3 tbsp butter
½ cup milk
1½ cups shredded cheddar cheese
Optional: sour cream or cream cheese for mashed potatoes
Preheat oven to 375°F. Grease a 9×13″ baking dish.
Mix ground beef, breadcrumbs, egg, onion, garlic, Worcestershire, ketchup, salt, and pepper.
Press into the baking dish. Spread extra ketchup on top.
Bake for 25–30 minutes. Drain excess grease.
Meanwhile, boil and mash potatoes with butter, milk, salt, and optional sour cream.
Spread mashed potatoes over meat layer. Top with shredded cheese.
Return to oven and bake 15–20 minutes, until cheese is melted and bubbly.
Let rest 10 minutes before serving.
Add cooked carrots or mushrooms to meat mixture for extra nutrition.
Swap cheddar with Colby Jack or mozzarella.
For convenience, use pre-made mashed potatoes.
