A hearty one-skillet meal with crispy potatoes, savory ground beef, and melty cheese — comfort food at its easiest and most satisfying.
1 lb ground beef (or sausage, turkey, etc.)
3 medium potatoes, diced (Yukon or Russet)
1 small onion, diced
2 garlic cloves, minced (optional)
1½ cups shredded cheddar or mozzarella cheese
2 tablespoons oil
1 tsp salt
½ tsp pepper
1 tsp paprika
Optional: green onions, sour cream, or parsley for garnish
Heat oil in a large skillet over medium heat. Add potatoes and cook 12–15 minutes, stirring occasionally, until golden and tender. Remove and set aside.
In the same skillet, cook ground meat until browned. Drain excess fat.
Add onion and garlic; cook 3–4 minutes until soft. Season with salt, pepper, and paprika.
Return potatoes to skillet and mix well.
Sprinkle with cheese, cover, and cook 3–5 minutes until cheese is melted.
Garnish and serve hot.
Add peppers, spinach, or black beans for variety. Swap cheddar with pepper jack for a spicy version. Reheat leftovers on the stovetop for best texture.
