2 lbs red or Yukon Gold potatoes, diced
14 oz smoked sausage, sliced
1 ranch seasoning packet
2–3 tablespoons olive oil or melted butter
1½ cups shredded cheddar cheese
Optional garnish: chopped parsley or green onions
Preheat oven to 400°F and grease a 9×13-inch baking dish.
Cut potatoes into 1-inch pieces and slice sausage.
Toss potatoes and sausage with oil and ranch seasoning.
Spread into dish, cover with foil, and bake for 30 minutes.
Remove foil, stir, and bake uncovered for 20–25 more minutes.
Add cheese and return to oven for 5–7 minutes to melt.
Let rest 5 minutes before serving. Add garnish if desired.
