Cheesy Stuffed Meatloaf Bites are juicy, savory, and bursting with melted cheese centers. Perfect for weeknight meals, lunchboxes, or party snacks.
1 lb ground beef (or turkey)
½ cup panko breadcrumbs
¼ cup milk
1 egg
1 small onion, grated
2 garlic cloves, minced
1 tsp Worcestershire sauce
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
20–24 cheese cubes (cheddar or mozzarella)
Preheat oven to 375°F and grease a mini muffin tin or baking sheet.
Mix breadcrumbs and milk; let sit 5 minutes.
Combine all ingredients (except cheese) in a large bowl and mix gently.
Scoop about 1 tbsp of meat, flatten, place cheese cube inside, and roll into a ball.
Place bites in muffin tin or on baking sheet.
Bake for 18–22 minutes, until cooked through and golden.
Let rest 5 minutes before serving.
Swap ground chicken or turkey as needed.
Use pepper jack for a spicy twist.
Freeze after baking for up to 3 months.
Serve with marinara or ranch for dipping.
