Mini meatloaf bites filled with gooey cheese and baked to juicy perfection. A fun, delicious twist on the classic family favorite.
1 lb ground beef (80/20)
½ cup breadcrumbs (plain or seasoned)
¼ cup milk
1 egg
¼ cup finely diced onion
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon dried thyme
¾ cup shredded cheddar or mozzarella (or cheese cubes)
Preheat oven to 375°F. Lightly grease a mini muffin tin.
In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire, ketchup, and seasonings.
Fill each muffin cup halfway with meat mixture. Press to form a well.
Add cheese to the center of each and cover with more meat to seal.
(Optional) Top each with a dab of ketchup or BBQ sauce.
Bake for 18–22 minutes, until cooked through and tops are browned.
Let rest for 5 minutes before serving.
Swap ground beef for turkey or chicken if desired.
Add finely grated veggies for extra nutrition.
Store leftovers in an airtight container for up to 4 days.
