Cheesy Stuffed Meatloaf Bites – Juicy, Mini, and Melt-in-Your-Mouth

Mini meatloaf bites filled with gooey cheese and baked to juicy perfection. A fun, delicious twist on the classic family favorite.

Ingredients

  • 1 lb ground beef (80/20)

  • ½ cup breadcrumbs (plain or seasoned)

  • ¼ cup milk

  • 1 egg

  • ¼ cup finely diced onion

  • 2 garlic cloves, minced

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoons ketchup

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon paprika

  • ¼ teaspoon dried thyme

  • ¾ cup shredded cheddar or mozzarella (or cheese cubes)

Instructions

  • Preheat oven to 375°F. Lightly grease a mini muffin tin.

  • In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire, ketchup, and seasonings.

  • Fill each muffin cup halfway with meat mixture. Press to form a well.

  • Add cheese to the center of each and cover with more meat to seal.

  • (Optional) Top each with a dab of ketchup or BBQ sauce.

  • Bake for 18–22 minutes, until cooked through and tops are browned.

  • Let rest for 5 minutes before serving.

Notes

  • Swap ground beef for turkey or chicken if desired.

  • Add finely grated veggies for extra nutrition.

  • Store leftovers in an airtight container for up to 4 days.
