A savory meatloaf with a cheesy surprise inside — tender, juicy, and stuffed with gooey melted cheese, this comfort food classic is perfect for family dinners or meal prep.
1 lb ground beef (or ¾ lb beef + ¼ lb ground pork)
1/2 cup breadcrumbs
1/3 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1 tbsp Worcestershire sauce (optional)
1½ cups shredded or cubed mozzarella or cheddar
Glaze:
1/3 cup ketchup
1 tbsp brown sugar
1 tsp Worcestershire sauce
Preheat oven to 375°F. Line a baking sheet or loaf pan.
Mix breadcrumbs and milk; let soak for 5 minutes.
In a large bowl, mix ground meat, soaked breadcrumbs, egg, onion, garlic, seasonings, and Worcestershire.
Flatten mixture into a rectangle on parchment. Add cheese to the center and roll into a loaf, sealing the edges.
Place on prepared pan. Mix glaze ingredients and brush over the top.
Bake 50–60 minutes, until internal temp reaches 160°F. Broil last 2–3 minutes for caramelized glaze.
Let rest 10–15 minutes before slicing
