A savory meatloaf with a cheesy surprise inside — tender, juicy, and stuffed with gooey melted cheese, this comfort food classic is perfect for family dinners or meal prep.

Ingredients

  • 1 lb ground beef (or ¾ lb beef + ¼ lb ground pork)

  • 1/2 cup breadcrumbs

  • 1/3 cup milk

  • 1 egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp Italian seasoning

  • 1 tbsp Worcestershire sauce (optional)

  • 1½ cups shredded or cubed mozzarella or cheddar

Glaze:

  • 1/3 cup ketchup

  • 1 tbsp brown sugar

  • 1 tsp Worcestershire sauce

Instructions

  • Preheat oven to 375°F. Line a baking sheet or loaf pan.

  • Mix breadcrumbs and milk; let soak for 5 minutes.

  • In a large bowl, mix ground meat, soaked breadcrumbs, egg, onion, garlic, seasonings, and Worcestershire.

  • Flatten mixture into a rectangle on parchment. Add cheese to the center and roll into a loaf, sealing the edges.

  • Place on prepared pan. Mix glaze ingredients and brush over the top.

  • Bake 50–60 minutes, until internal temp reaches 160°F. Broil last 2–3 minutes for caramelized glaze.

  • Let rest 10–15 minutes before slicing

Notes

  • Try bacon-wrapping or adding sautéed spinach inside.

  • Use gluten-free breadcrumbs if needed.
