A hearty breakfast casserole made with chicken sausage, eggs, cheddar cheese, and biscuit pieces. Ideal for brunches, meal prep, or feeding a crowd with ease.

1 lb chicken sausage, cooked and chopped
1 can (8-count) refrigerated biscuit dough
8 large eggs
1/2 cup milk (any kind)
1 1/2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp pepper
1 tbsp melted butter (optional)

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.

  • Cook sausage if raw, then chop into pieces.

  • Cut each biscuit into quarters.

  • In a large bowl, whisk eggs, milk, salt, and pepper. Stir in sausage and 1 cup of cheese.

  • Arrange biscuit pieces in the dish. Pour egg mixture over them. Press gently to submerge.

  • Sprinkle remaining cheese on top. Brush with butter if desired.

  • Bake uncovered for 35–40 minutes until set and golden.

  • Cool for 5–10 minutes before serving.
