A hearty breakfast casserole made with chicken sausage, eggs, cheddar cheese, and biscuit pieces. Ideal for brunches, meal prep, or feeding a crowd with ease.
1 lb chicken sausage, cooked and chopped
1 can (8-count) refrigerated biscuit dough
8 large eggs
1/2 cup milk (any kind)
1 1/2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp pepper
1 tbsp melted butter (optional)
Preheat oven to 350°F. Grease a 9×13-inch baking dish.
Cook sausage if raw, then chop into pieces.
Cut each biscuit into quarters.
In a large bowl, whisk eggs, milk, salt, and pepper. Stir in sausage and 1 cup of cheese.
Arrange biscuit pieces in the dish. Pour egg mixture over them. Press gently to submerge.
Sprinkle remaining cheese on top. Brush with butter if desired.
Bake uncovered for 35–40 minutes until set and golden.
Cool for 5–10 minutes before serving.
