A delicious and filling breakfast casserole featuring everything bagels, chicken sausage, eggs, and veggies—great for meal prep or feeding a crowd.
4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup red bell pepper, diced
1/2 cup yellow onion, chopped
1 tbsp butter or cooking spray
Salt and black pepper to taste
Preheat oven to 375°F. Grease a 9×13-inch baking dish.
Brown sausage in a skillet over medium heat, 5–6 minutes.
Toast bagel cubes if very fresh.
Sauté bell pepper and onion until soft.
In a bowl, whisk eggs, milk, cream, salt, and pepper. Stir in half the cheese.
Add bagel cubes to the baking dish. Top with sausage and veggies.
Pour the egg mixture over and press gently.
Sprinkle with the remaining cheese.
Let rest 20–30 minutes or refrigerate overnight.
Bake uncovered for 40–45 minutes, until golden and set.
Cool 10 minutes before serving.
