A delicious and filling breakfast casserole featuring everything bagels, chicken sausage, eggs, and veggies—great for meal prep or feeding a crowd.

Ingredients

4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup red bell pepper, diced
1/2 cup yellow onion, chopped
1 tbsp butter or cooking spray
Salt and black pepper to taste

Instructions

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  • Brown sausage in a skillet over medium heat, 5–6 minutes.

  • Toast bagel cubes if very fresh.

  • Sauté bell pepper and onion until soft.

  • In a bowl, whisk eggs, milk, cream, salt, and pepper. Stir in half the cheese.

  • Add bagel cubes to the baking dish. Top with sausage and veggies.

  • Pour the egg mixture over and press gently.

  • Sprinkle with the remaining cheese.

  • Let rest 20–30 minutes or refrigerate overnight.

  • Bake uncovered for 40–45 minutes, until golden and set.

  • Cool 10 minutes before serving.
