A hearty and flavorful casserole made with beef chili, melty cheese, and golden tater tots—perfect for family dinners or potluck nights.

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • 1 (10 oz) can diced tomatoes with green chiles

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 cup frozen corn

  • 2 cups shredded sharp cheddar cheese

  • 1 (32 oz) bag frozen tater tots

  • Salt and pepper, to taste

  • Optional: scallions, jalapeños, sour cream for garnish

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large skillet, cook diced onions over medium heat until softened. Add garlic and cook for 30 seconds.

  • Add ground beef and cook until browned. Drain excess fat.

  • Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute.

  • Add tomatoes, black beans, and corn. Simmer for 5 minutes to thicken.

  • Spread chili mixture into a greased 9×13-inch baking dish.

  • Sprinkle cheese over the chili, then arrange tater tots in a single layer on top.

  • Bake for 35–40 minutes, until tots are golden and casserole is bubbly.

  • Garnish with scallions, jalapeños, or sour cream before serving.
