A hearty and flavorful casserole made with beef chili, melty cheese, and golden tater tots—perfect for family dinners or potluck nights.
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1 (10 oz) can diced tomatoes with green chiles
1 (15 oz) can black beans, drained and rinsed
1 cup frozen corn
2 cups shredded sharp cheddar cheese
1 (32 oz) bag frozen tater tots
Salt and pepper, to taste
Optional: scallions, jalapeños, sour cream for garnish
Preheat oven to 375°F (190°C).
In a large skillet, cook diced onions over medium heat until softened. Add garlic and cook for 30 seconds.
Add ground beef and cook until browned. Drain excess fat.
Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute.
Add tomatoes, black beans, and corn. Simmer for 5 minutes to thicken.
Spread chili mixture into a greased 9×13-inch baking dish.
Sprinkle cheese over the chili, then arrange tater tots in a single layer on top.
Bake for 35–40 minutes, until tots are golden and casserole is bubbly.
Garnish with scallions, jalapeños, or sour cream before serving.
