1 cup cherry tomatoes halved
1/2 cup diced bell pepper
1/2 cup corn kernels
1/4 cup finely chopped red onion
1/3 cup chopped fresh cilantro
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon lime zest
1 garlic clove minced
Salt to taste
Black pepper to taste

Instructions

  • Cook pasta in salted boiling water until tender yet slightly firm.

  • Drain and rinse the pasta with cool water.

  • Place cooled pasta in a large bowl.

  • Add tomatoes, bell pepper, corn, red onion, and cilantro.

  • Whisk olive oil, lime juice, lime zest, garlic, salt, and pepper in a small bowl.

  • Pour dressing over the pasta mixture.

  • Toss gently until evenly coated.

  • Chill for about 15 minutes before serving.
