12 ounces rotini pasta
1 cup cherry tomatoes halved
1/2 cup diced bell pepper
1/2 cup corn kernels
1/4 cup finely chopped red onion
1/3 cup chopped fresh cilantro
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon lime zest
1 garlic clove minced
Salt to taste
Black pepper to taste
Cook pasta in salted boiling water until tender yet slightly firm.
Drain and rinse the pasta with cool water.
Place cooled pasta in a large bowl.
Add tomatoes, bell pepper, corn, red onion, and cilantro.
Whisk olive oil, lime juice, lime zest, garlic, salt, and pepper in a small bowl.
Pour dressing over the pasta mixture.
Toss gently until evenly coated.
