Cinnamon Roll French Toast Bake is a warm breakfast casserole made with cinnamon rolls soaked in vanilla custard and baked until golden, then drizzled with icing.

2 cans refrigerated cinnamon rolls with icing
4 large eggs
1 cup whole milk
1/2 cup heavy cream
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon melted butter
1/3 cup chopped pecans optional

Instructions

  • Preheat oven to 350 degrees Fahrenheit and grease a 9 by 13 inch baking dish with melted butter.

  • Cut cinnamon rolls into quarters and spread evenly in the dish.

  • In a bowl, whisk eggs, milk, heavy cream, sugar, cinnamon, and vanilla.

  • Pour custard evenly over cinnamon roll pieces.

  • Let stand 10 to 15 minutes to absorb.

  • Sprinkle nuts on top if using.

  • Cover with foil and bake 25 minutes.

  • Remove foil and bake 15 to 20 minutes until golden and set.

  • Cool 10 minutes, then drizzle warmed icing over the top before serving.
