Cinnamon Roll French Toast Bake is a warm breakfast casserole made with cinnamon rolls soaked in vanilla custard and baked until golden, then drizzled with icing.
2 cans refrigerated cinnamon rolls with icing
4 large eggs
1 cup whole milk
1/2 cup heavy cream
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon melted butter
1/3 cup chopped pecans optional
Preheat oven to 350 degrees Fahrenheit and grease a 9 by 13 inch baking dish with melted butter.
Cut cinnamon rolls into quarters and spread evenly in the dish.
In a bowl, whisk eggs, milk, heavy cream, sugar, cinnamon, and vanilla.
Pour custard evenly over cinnamon roll pieces.
Let stand 10 to 15 minutes to absorb.
Sprinkle nuts on top if using.
Cover with foil and bake 25 minutes.
Remove foil and bake 15 to 20 minutes until golden and set.
Cool 10 minutes, then drizzle warmed icing over the top before serving.
