A fresh and colorful classic pasta salad with crisp vegetables, mozzarella, and a tangy Italian dressing.

Ingredients

12 ounces rotini, penne, or bowtie pasta
1 cup Italian dressing
1 1/2 cups cherry tomatoes, halved
1 cup diced cucumber
1 cup diced bell peppers
1/3 cup finely chopped red onion
1 cup mozzarella cubes
1/2 cup sliced black olives
1/4 cup sliced salami (optional)
2 tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook pasta in salted boiling water until tender, then drain and rinse with cold water.
  • Let pasta drain completely.
  • Toss pasta with most of the Italian dressing.
  • Add tomatoes, cucumber, peppers, onion, mozzarella, olives, and salami.
  • Mix gently to combine.
  • Add remaining dressing, salt, and pepper.
  • Chill for at least 1 hour before serving.

Notes

Add extra dressing before serving if the salad becomes dry.
