This Cracker Barrel Meatloaf Copycat Recipe is a moist, cheesy, and savory classic made with Ritz crackers, sharp cheddar, and a sweet ketchup glaze.
2 lbs ground beef (80/20)
2 eggs
1/2 cup milk
1 sleeve Ritz crackers, crushed (about 30)
1 cup shredded sharp cheddar
1 small onion, finely chopped
1/2 cup green bell pepper, finely chopped
1/2 cup ketchup
1/2 tsp salt
1/2 tsp pepper
Glaze
1/2 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard (optional)
Preheat oven to 350°F. Line or grease a loaf pan.
Crush Ritz crackers finely.
Sauté onion and green pepper (optional).
In a large bowl, combine beef, eggs, milk, cheese, onion, pepper, crackers, ketchup, salt, and pepper. Mix gently.
Shape into a loaf and place in pan.
Bake for 40 minutes.
Mix glaze ingredients and spread over the loaf.
Return to oven for 15–20 minutes until internal temp reaches 160°F.
Let rest 10 minutes before slicing.
Use saltines or panko instead of Ritz.
Swap in ground turkey or pork.
Double glaze for extra topping.
