This Cracker Barrel Meatloaf Copycat Recipe is a moist, cheesy, and savory classic made with Ritz crackers, sharp cheddar, and a sweet ketchup glaze.

Ingredients

  • 2 lbs ground beef (80/20)

  • 2 eggs

  • 1/2 cup milk

  • 1 sleeve Ritz crackers, crushed (about 30)

  • 1 cup shredded sharp cheddar

  • 1 small onion, finely chopped

  • 1/2 cup green bell pepper, finely chopped

  • 1/2 cup ketchup

  • 1/2 tsp salt

  • 1/2 tsp pepper

Glaze

  • 1/2 cup ketchup

  • 2 tbsp brown sugar

  • 1 tsp yellow mustard (optional)

Instructions

  • Preheat oven to 350°F. Line or grease a loaf pan.

  • Crush Ritz crackers finely.

  • Sauté onion and green pepper (optional).

  • In a large bowl, combine beef, eggs, milk, cheese, onion, pepper, crackers, ketchup, salt, and pepper. Mix gently.

  • Shape into a loaf and place in pan.

  • Bake for 40 minutes.

  • Mix glaze ingredients and spread over the loaf.

  • Return to oven for 15–20 minutes until internal temp reaches 160°F.

  • Let rest 10 minutes before slicing.

Notes

  • Use saltines or panko instead of Ritz.

  • Swap in ground turkey or pork.

  • Double glaze for extra topping.

  • Freezes well, raw or cooked.
