A festive and creamy cheese log rolled in tart cranberries and toasted pecans—perfect for holiday gatherings, charcuterie boards, or cozy appetizers.
2 (8 oz) blocks cream cheese, softened
1 ½ cups shredded sharp cheddar cheese
½ cup dried cranberries, chopped
½ cup toasted pecans, chopped
2 green onions, finely chopped
½ tsp garlic powder
Salt and pepper to taste
In a large bowl, mix cream cheese, cheddar, green onions, garlic powder, half the cranberries, and half the pecans. Season lightly.
Transfer to plastic wrap and shape into a log. Chill for 1 hour.
On a plate, mix the remaining cranberries and pecans.
Unwrap the cheese log and roll in the cranberry-pecan coating. Press gently to adhere.
Chill until ready to serve. Let sit at room temperature for 10–15 minutes before slicing.
Try with dried cherries or walnuts. Make up to 3 days ahead. Serve with crackers, crostini, or veggies.
