12 ounces smoked sausage, sliced
12 ounces penne pasta
1 tablespoon olive oil
1 small onion, chopped
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon tomato paste
1/4 teaspoon crushed red pepper flakes (optional)
2 tablespoons parsley

Instructions

  • Heat oil in a large pot over medium heat and brown sausage slices. Remove and set aside.

  • Cook onion and bell peppers in the same pot until softened.

  • Add garlic and spices, stirring briefly.

  • Mix in tomato paste, then pour in broth and cream.

  • Bring to a simmer and add pasta.

  • Cook covered, stirring occasionally, until pasta is tender.

  • Return sausage to the pot and heat through.
