12 ounces smoked sausage, sliced
12 ounces penne pasta
1 tablespoon olive oil
1 small onion, chopped
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon tomato paste
1/4 teaspoon crushed red pepper flakes (optional)
2 tablespoons parsley
Heat oil in a large pot over medium heat and brown sausage slices. Remove and set aside.
Cook onion and bell peppers in the same pot until softened.
Add garlic and spices, stirring briefly.
Mix in tomato paste, then pour in broth and cream.
Bring to a simmer and add pasta.
Cook covered, stirring occasionally, until pasta is tender.
Return sausage to the pot and heat through.
Stir in Parmesan cheese until creamy.
Garnish with parsley and serve warm.
Adjust spice level by reducing Cajun seasoning. Add broth if sauce becomes too thick.
