Creamy Cheesy Ground Beef Taco Soup is a rich, one-pot Tex-Mex-inspired dish loaded with seasoned beef, beans, corn, melted cheese, and cream — perfect for weeknight dinners or game day.

  • 1 lb ground beef

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 (14 oz) can diced tomatoes

  • 1 cup salsa or 1 can Rotel

  • 1 (15 oz) can black or pinto beans, drained and rinsed

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 2 cups beef broth

  • 4 oz cream cheese, cubed

  • 1 cup shredded cheddar cheese

  • ½ cup heavy cream or half & half

  • Salt and pepper to taste

  • Optional toppings: sour cream, avocado, tortilla strips, green onions

Instructions

  • In a large pot, brown ground beef over medium heat. Drain excess fat.

  • Add onion and cook until softened, about 4 minutes. Stir in garlic and taco seasoning.

  • Add tomatoes, salsa, beans, corn, and beef broth. Simmer 10–15 minutes.

  • Reduce heat. Add cream cheese and stir until melted. Add shredded cheese and stir until smooth.

  • Stir in cream. Simmer gently for 5 more minutes. Adjust seasoning to taste.

  • Serve hot with toppings of choice.

Notes

For a thicker soup, add masa harina or reduce broth. Use ground turkey or dairy-free ingredients for dietary needs. Great for freezing and reheating.
