Creamy Cheesy Ground Beef Taco Soup is a rich, one-pot Tex-Mex-inspired dish loaded with seasoned beef, beans, corn, melted cheese, and cream — perfect for weeknight dinners or game day.
1 lb ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade)
1 (14 oz) can diced tomatoes
1 cup salsa or 1 can Rotel
1 (15 oz) can black or pinto beans, drained and rinsed
1 cup corn kernels (fresh, canned, or frozen)
2 cups beef broth
4 oz cream cheese, cubed
1 cup shredded cheddar cheese
½ cup heavy cream or half & half
Salt and pepper to taste
Optional toppings: sour cream, avocado, tortilla strips, green onions
In a large pot, brown ground beef over medium heat. Drain excess fat.
Add onion and cook until softened, about 4 minutes. Stir in garlic and taco seasoning.
Add tomatoes, salsa, beans, corn, and beef broth. Simmer 10–15 minutes.
Reduce heat. Add cream cheese and stir until melted. Add shredded cheese and stir until smooth.
Stir in cream. Simmer gently for 5 more minutes. Adjust seasoning to taste.
Serve hot with toppings of choice.
For a thicker soup, add masa harina or reduce broth. Use ground turkey or dairy-free ingredients for dietary needs. Great for freezing and reheating.
