A creamy and herb-filled potato salad made with tender potatoes, fresh dill, and a smooth tangy dressing.

Ingredients

2 pounds potatoes
3/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons fresh dill
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/2 cup celery
1/4 cup red onion
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs (optional)

Instructions

  • Boil potatoes until fork-tender, then drain and cool.
  • Mix mayonnaise, sour cream, mustard, lemon juice, dill, salt, and pepper.
  • Add celery and onion to the dressing.
  • Fold in potatoes gently.
  • Add chopped eggs if using.
  • Chill for at least one hour before serving.
