1 tablespoon olive oil
1 small yellow onion finely chopped
3 cloves garlic minced
1 cup vegetable broth
1 cup heavy cream
1 pound potato gnocchi
4 cups fresh baby spinach
1 cup crumbled feta cheese divided
1/4 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes
Salt to taste
Black pepper to taste
1 teaspoon lemon zest optional
Heat olive oil in a large skillet over medium heat.
Add chopped onion and cook for 4 to 5 minutes until softened.
Stir in minced garlic and cook for 30 seconds.
