Creamy lemon Boursin chicken is a simple, one-pan dinner featuring tender chicken in a luscious garlic-herb sauce with a burst of citrus. Easy enough for weeknights, elegant enough for company.

Ingredients

2 boneless, skinless chicken breasts
1 tbsp olive oil or butter
Salt and black pepper
1/2 tsp garlic powder
2 cloves garlic, minced
1/2 cup low-sodium chicken stock
1 lemon, juiced and zested
1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
1/4 cup heavy cream
Fresh parsley or basil, chopped

Instructions

  • Season chicken with salt, pepper, and garlic powder.

  • Heat oil in a skillet over medium-high. Sear chicken 5–6 minutes per side until cooked through. Remove and set aside.

  • Lower heat. Add garlic to skillet and sauté for 30 seconds.

  • Pour in stock, lemon juice, and zest. Simmer 2–3 minutes.

  • Stir in Boursin and let it melt. Add cream and cook until thickened.

  • Return chicken to pan and simmer 2–3 minutes more.

  • Garnish with herbs and serve hot.
