Creamy lemon Boursin chicken is a simple, one-pan dinner featuring tender chicken in a luscious garlic-herb sauce with a burst of citrus. Easy enough for weeknights, elegant enough for company.
2 boneless, skinless chicken breasts
1 tbsp olive oil or butter
Salt and black pepper
1/2 tsp garlic powder
2 cloves garlic, minced
1/2 cup low-sodium chicken stock
1 lemon, juiced and zested
1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
1/4 cup heavy cream
Fresh parsley or basil, chopped
Season chicken with salt, pepper, and garlic powder.
Heat oil in a skillet over medium-high. Sear chicken 5–6 minutes per side until cooked through. Remove and set aside.
Lower heat. Add garlic to skillet and sauté for 30 seconds.
Pour in stock, lemon juice, and zest. Simmer 2–3 minutes.
Stir in Boursin and let it melt. Add cream and cook until thickened.
Return chicken to pan and simmer 2–3 minutes more.
Garnish with herbs and serve hot.
