2 cups elbow macaroni
1 cup mayonnaise
1/4 cup sour cream
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup finely chopped celery
1/3 cup finely chopped red onion
1/2 cup shredded carrots
2 tablespoons chopped fresh parsley

Instructions

  • Cook macaroni in salted boiling water until tender, then drain and rinse with cold water.
  • Let the pasta drain completely to remove excess moisture.
  • In a large bowl, mix mayonnaise, sour cream, mustard, vinegar, sugar, salt, and pepper until smooth.
  • Add cooled macaroni and gently fold to coat evenly.
