12 ounces rotini pasta
1 pound shrimp
1 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup celery
1/3 cup red onion
1/2 cup red bell pepper
2 tablespoons parsley
1 tablespoon olive oil

Instructions

  • Cook pasta in salted boiling water until tender, then drain and cool.
  • Cook shrimp in olive oil until pink and opaque, then cool.
  • Mix mayonnaise, lemon juice, mustard, salt, and pepper.
  • Combine pasta, shrimp, and vegetables in a bowl.
