Tender chicken simmered in a creamy tomato basil sauce with garlic and parmesan.

Ingredients

2 pounds boneless skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic minced
1 can crushed tomatoes
1/2 cup chicken broth
3/4 cup heavy cream
1 teaspoon dried basil
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese
1 tablespoon butter
Fresh basil for garnish

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Season chicken with salt and pepper and brown both sides.

  • Remove chicken and set aside.

  • Cook garlic in butter until fragrant.

  • Add crushed tomatoes and chicken broth.

  • Stir in basil and oregano and simmer briefly.

  • Stir in heavy cream and reduce heat.

  • Return chicken to the skillet.

  • Simmer until chicken cooks through.

  • Stir in parmesan cheese and garnish with basil.

Notes
