Tender chicken simmered in a creamy tomato basil sauce with garlic and parmesan.
2 pounds boneless skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic minced
1 can crushed tomatoes
1/2 cup chicken broth
3/4 cup heavy cream
1 teaspoon dried basil
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese
1 tablespoon butter
Fresh basil for garnish
Heat olive oil in a skillet over medium heat.
Season chicken with salt and pepper and brown both sides.
Remove chicken and set aside.
Cook garlic in butter until fragrant.
Add crushed tomatoes and chicken broth.
Stir in basil and oregano and simmer briefly.
Stir in heavy cream and reduce heat.
Return chicken to the skillet.
Simmer until chicken cooks through.
Stir in parmesan cheese and garnish with basil.
Fresh basil provides the brightest flavor. Pasta or rice pairs well with the creamy tomato sauce.
