Tender slow cooker chicken cooked with sweet potatoes, garlic, herbs, and savory broth.

Ingredients

2 pounds boneless skinless chicken thighs or chicken breasts
3 medium sweet potatoes, peeled and cubed
1 small onion, chopped
3 cloves garlic, minced
1 cup chicken broth
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley

Instructions

    • Place sweet potatoes and onion in the bottom of the crockpot.

    • Add the chicken on top.

    • Mix broth, olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.

    • Pour the mixture over the chicken and potatoes.

    • Cover and cook on low for 6–7 hours or high for 3–4 hours.

    • Check that the sweet potatoes are tender.

    • Sprinkle with parsley before serving.

    • Serve with some of the cooking broth.

Notes

Carrots or green beans can be added during the final hour of cooking.
