Tender slow cooker chicken cooked with sweet potatoes, garlic, herbs, and savory broth.
2 pounds boneless skinless chicken thighs or chicken breasts
3 medium sweet potatoes, peeled and cubed
1 small onion, chopped
3 cloves garlic, minced
1 cup chicken broth
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley
Place sweet potatoes and onion in the bottom of the crockpot.
Add the chicken on top.
Mix broth, olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.
Pour the mixture over the chicken and potatoes.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Check that the sweet potatoes are tender.
Sprinkle with parsley before serving.
Serve with some of the cooking broth.
Carrots or green beans can be added during the final hour of cooking.
