Hearty slow cooker soup made with tender chicken, beans, corn, tomatoes, and warm spices.

Ingredients

2 pounds boneless skinless chicken breasts
1 can diced tomatoes
1 can black beans, drained and rinsed
1 cup corn kernels
1 small onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lime juice
2 tablespoons chopped cilantro

Instructions

  • Place chicken in the bottom of the crockpot.

  • Add tomatoes, black beans, corn, onion, and garlic.

  • Pour in chicken broth.

  • Add chili powder, cumin, paprika, salt, and pepper.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Remove chicken and shred with two forks.

  • Return shredded chicken to the soup.

  • Stir in lime juice before serving.

Notes

Serve with tortilla strips, avocado, cheese, and lime wedges.
