Tender slow cooker chicken cooked in a sweet pineapple barbecue sauce with garlic and peppers.
2 pounds boneless skinless chicken breasts or chicken thighs
1 cup barbecue sauce
1 cup pineapple chunks with juice
1/2 cup pineapple juice
3 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon brown sugar
1 small onion, sliced
1 red bell pepper, sliced
Place chicken in the bottom of the crockpot.
Add onion and bell pepper.
Mix barbecue sauce, pineapple chunks, pineapple juice, garlic, soy sauce, and brown sugar.
Pour the mixture over the chicken.
Cover and cook on low for 5–6 hours or high for 3–4 hours.
Remove chicken and shred with two forks.
Return shredded chicken to the crockpot and mix with the sauce.
Cook uncovered for 10 minutes before serving.
Serve over rice or on sandwich buns with extra pineapple barbecue sauce.
