Crockpot Reuben Dip combines corned beef, sauerkraut, Swiss cheese, cream cheese, and Thousand Island dressing into a warm, creamy appetizer inspired by the classic sandwich.
8 ounces cream cheese, softened
2 cups shredded Swiss cheese
1 1/2 cups chopped corned beef
1 cup sauerkraut, drained and squeezed dry
3/4 cup Thousand Island dressing
Optional pinch of black pepper
Lightly grease the inside of a 4 to 6 quart slow cooker.
Spread the softened cream cheese across the bottom.
Add the chopped corned beef and drained sauerkraut.
Pour the Thousand Island dressing over the mixture.
Sprinkle the shredded Swiss cheese on top.
Cover and cook on low for 2 to 3 hours, stirring once or twice, until melted and smooth.
Stir well before serving and switch to warm to keep heated.
