Crockpot Reuben Dip combines corned beef, sauerkraut, Swiss cheese, cream cheese, and Thousand Island dressing into a warm, creamy appetizer inspired by the classic sandwich.

Ingredients

8 ounces cream cheese, softened
2 cups shredded Swiss cheese
1 1/2 cups chopped corned beef
1 cup sauerkraut, drained and squeezed dry
3/4 cup Thousand Island dressing
Optional pinch of black pepper

Instructions

  • Lightly grease the inside of a 4 to 6 quart slow cooker.

  • Spread the softened cream cheese across the bottom.

  • Add the chopped corned beef and drained sauerkraut.

  • Pour the Thousand Island dressing over the mixture.

  • Sprinkle the shredded Swiss cheese on top.

  • Cover and cook on low for 2 to 3 hours, stirring once or twice, until melted and smooth.

  • Stir well before serving and switch to warm to keep heated.
