A hearty slow cooker casserole with seasoned beef, beans, corn, tomatoes, and melted cheese inspired by taco flavors.

Ingredients

1 1/2 pounds ground beef
1 packet taco seasoning
1 can diced tomatoes with green chiles
1 can black beans drained
1 cup corn
1 small onion diced
2 cloves garlic minced
1 cup salsa
1 1/2 cups shredded cheddar cheese
2 cups crushed tortilla chips
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup sour cream optional
Fresh cilantro optional

Instructions

  • Brown the ground beef in a skillet.

  • Drain excess grease.

  • Transfer beef to the slow cooker.

  • Add onion, garlic, taco seasoning, salt, and pepper.

  • Stir in tomatoes, salsa, beans, and corn.

  • Cover and cook on LOW for 3–4 hours or HIGH for 2 hours.

  • Stir in half the cheese and crushed tortilla chips near the end.

  • Sprinkle remaining cheese on top.

  • Cover and cook until cheese melts.

  • Serve with sour cream and cilantro if desired.

Notes

Add tortilla chips near the end so they maintain texture. Fresh toppings such as avocado or lettuce complement the casserole.
