A hearty slow cooker casserole with seasoned beef, beans, corn, tomatoes, and melted cheese inspired by taco flavors.
1 1/2 pounds ground beef
1 packet taco seasoning
1 can diced tomatoes with green chiles
1 can black beans drained
1 cup corn
1 small onion diced
2 cloves garlic minced
1 cup salsa
1 1/2 cups shredded cheddar cheese
2 cups crushed tortilla chips
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup sour cream optional
Fresh cilantro optional
Brown the ground beef in a skillet.
Drain excess grease.
Transfer beef to the slow cooker.
Add onion, garlic, taco seasoning, salt, and pepper.
Stir in tomatoes, salsa, beans, and corn.
Cover and cook on LOW for 3–4 hours or HIGH for 2 hours.
Stir in half the cheese and crushed tortilla chips near the end.
Sprinkle remaining cheese on top.
Cover and cook until cheese melts.
Serve with sour cream and cilantro if desired.
