A fresh and flavorful pasta salad inspired by classic bruschetta, with tomatoes, basil, and a light garlic dressing.

Ingredients

12 ounces rotini or penne pasta
2 cups cherry tomatoes, halved
3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook pasta in salted boiling water until tender, then drain and rinse with cold water.
  • Let pasta drain completely.
  • Mix tomatoes, olive oil, balsamic vinegar, and garlic in a large bowl and let sit briefly.
  • Add pasta and toss to coat.
  • Stir in Parmesan, salt, and pepper.
  • Add fresh basil and mix gently.
  • Chill for 30–60 minutes before serving.
