Easy Asian Cucumber Salad is a crisp, tangy side dish featuring thinly sliced cucumbers tossed in a savory sesame dressing. It is light, refreshing, and ideal alongside grilled meats, rice, or noodles.
4 cups thinly sliced English cucumbers
1 teaspoon salt
3 tablespoons rice vinegar
1 1/2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 teaspoons sugar
1 small red chili, thinly sliced (optional)
1 tablespoon toasted sesame seeds
2 tablespoons sliced green onions
Place sliced cucumbers in a colander and sprinkle with salt. Toss gently and rest for 20 to 30 minutes.
Rinse cucumbers briefly under cold water and pat dry thoroughly.
In a bowl, whisk rice vinegar, soy sauce, sesame oil, and sugar until dissolved.
Add cucumbers to the bowl and toss until evenly coated.
Stir in sliced chili if using.
