2 pounds beef chuck
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 onion
3 garlic cloves
2 tablespoons tomato paste
4 cups beef broth
3 carrots
3 potatoes
1 teaspoon thyme
2 bay leaves
1 tablespoon Worcestershire sauce
2 tablespoons parsley
Toss beef with flour, salt, and pepper.
Brown beef in olive oil in batches.
Cook onion until softened and add garlic.
Stir in tomato paste.
Return beef to the pot and add broth.
