2 cucumbers, thinly sliced
1 cup imitation crab meat, shredded
1 avocado, diced
1/2 cup shredded carrots
2 green onions, sliced
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon mayonnaise
1 teaspoon sesame oil
1 teaspoon sugar
1 tablespoon sesame seeds
1 teaspoon sriracha (optional)
Slice cucumbers thinly and place in a bowl.
Rest cucumbers for 5 minutes and drain excess liquid.
Shred imitation crab meat.
Dice avocado and slice green onions.
Whisk rice vinegar, soy sauce, mayonnaise, sesame oil, and sugar.
Combine cucumbers, crab, carrots, and green onions.
Pour dressing over the mixture and toss gently.
Fold in avocado carefully.
Sprinkle sesame seeds on top.
Chill briefly before serving.
Add avocado just before serving to maintain fresh color and texture.
