Easy Caprese Pasta Salad combines tender pasta, juicy tomatoes, creamy mozzarella, fresh basil, and a light olive oil dressing for a refreshing Italian-inspired dish.

Ingredients

12 ounces rotini pasta
2 cups cherry tomatoes halved
1 cup fresh mozzarella balls
1/2 cup fresh basil leaves torn
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 garlic clove minced
Salt to taste
Black pepper to taste

Instructions

  • Cook pasta in salted boiling water until tender but firm.

  • Drain and cool the pasta under running water.

  • Place tomatoes, mozzarella, and basil in a large bowl.

  • In a small bowl whisk olive oil, balsamic vinegar, garlic, salt, and pepper.

  • Add cooled pasta to the bowl with the vegetables and cheese.

  • Pour the dressing over the salad and toss gently.

  • Let the salad rest for about 10 minutes before serving.

Notes

Whole wheat pasta can be used for added fiber. A light drizzle of balsamic glaze before serving adds extra depth.
