Easy Caprese Pasta Salad combines tender pasta, juicy tomatoes, creamy mozzarella, fresh basil, and a light olive oil dressing for a refreshing Italian-inspired dish.
12 ounces rotini pasta
2 cups cherry tomatoes halved
1 cup fresh mozzarella balls
1/2 cup fresh basil leaves torn
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 garlic clove minced
Salt to taste
Black pepper to taste
Cook pasta in salted boiling water until tender but firm.
Drain and cool the pasta under running water.
Place tomatoes, mozzarella, and basil in a large bowl.
In a small bowl whisk olive oil, balsamic vinegar, garlic, salt, and pepper.
Add cooled pasta to the bowl with the vegetables and cheese.
Pour the dressing over the salad and toss gently.
Let the salad rest for about 10 minutes before serving.
