A refreshing pasta salad made with tender pasta, cherry tomatoes, mozzarella, basil, and a light olive oil dressing inspired by classic Caprese flavors.
12 ounces rotini pasta
2 cups cherry tomatoes, halved
8 ounces mozzarella pearls
1/3 cup fresh basil leaves
3 tablespoons olive oil
2 tablespoons balsamic glaze
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook pasta in salted boiling water until tender.
Drain and rinse briefly with cool water.
Place pasta in a large bowl.
Add halved tomatoes and mozzarella pearls.
Tear basil leaves and add them to the bowl.
Mix olive oil, balsamic, salt, and pepper in a small bowl.
Pour dressing over the salad and toss gently.
Let the salad rest for 10 minutes before serving.
Reserve a small amount of dressing to refresh the salad if preparing it ahead of time.
