Cheesy, saucy, and loaded with flavor, these easy ground beef enchiladas are perfect for a quick and comforting dinner that the whole family will love.

Ingredients

  • 1 lb ground beef

  • 8 small flour or corn tortillas

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • ½ tsp salt

  • 1 can (4 oz) diced green chilies (optional)

  • 2 cups shredded cheddar or Mexican blend cheese

  • 1 can (10 oz) red enchilada sauce

  • Optional garnishes: cilantro, sour cream, diced tomatoes

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • In a skillet, brown ground beef over medium heat. Drain excess fat.

  • Add onion, garlic, spices, and chilies (if using). Cook until onion is soft.

  • Stir in ¼ cup enchilada sauce and ½ cup cheese. Remove from heat.

  • Warm tortillas and fill each with beef mixture. Roll and place seam-side down in dish.

  • Pour remaining sauce over enchiladas. Top with remaining cheese.

  • Cover and bake for 20 minutes. Uncover and bake 5–10 more minutes.

  • Let cool slightly. Garnish and serve warm.

Notes

Add beans or corn to the filling for variation. To freeze, assemble but don’t bake. Use spicy enchilada sauce if desired.
