Cheesy, saucy, and loaded with flavor, these easy ground beef enchiladas are perfect for a quick and comforting dinner that the whole family will love.
1 lb ground beef
8 small flour or corn tortillas
1 small onion, diced
2 garlic cloves, minced
1 tsp chili powder
1 tsp ground cumin
½ tsp salt
1 can (4 oz) diced green chilies (optional)
2 cups shredded cheddar or Mexican blend cheese
1 can (10 oz) red enchilada sauce
Optional garnishes: cilantro, sour cream, diced tomatoes
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a skillet, brown ground beef over medium heat. Drain excess fat.
Add onion, garlic, spices, and chilies (if using). Cook until onion is soft.
Stir in ¼ cup enchilada sauce and ½ cup cheese. Remove from heat.
Warm tortillas and fill each with beef mixture. Roll and place seam-side down in dish.
Pour remaining sauce over enchiladas. Top with remaining cheese.
Cover and bake for 20 minutes. Uncover and bake 5–10 more minutes.
Let cool slightly. Garnish and serve warm.
Add beans or corn to the filling for variation. To freeze, assemble but don’t bake. Use spicy enchilada sauce if desired.
