Easy Cucumber Caprese Salad is a fresh twist on the classic Italian combination of tomatoes, mozzarella, and basil, with crisp cucumber added for extra crunch and balance.
2 English cucumbers, sliced into 1/4-inch rounds
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella balls, drained
1/4 cup fresh basil leaves, torn
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper
Wash and dry the cucumbers, then slice into 1/4-inch rounds and place in a large bowl.
Halve the cherry tomatoes and add them to the bowl.
Drain and pat dry the mozzarella balls, then add to the mixture.
Tear the basil leaves and scatter over the salad.
Drizzle olive oil and balsamic vinegar evenly on top.
Sprinkle with salt and black pepper.
