Easy Cucumber Caprese Salad is a fresh twist on the classic Italian combination of tomatoes, mozzarella, and basil, with crisp cucumber added for extra crunch and balance.

Ingredients

2 English cucumbers, sliced into 1/4-inch rounds
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella balls, drained
1/4 cup fresh basil leaves, torn
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper

Instructions

  • Wash and dry the cucumbers, then slice into 1/4-inch rounds and place in a large bowl.

  • Halve the cherry tomatoes and add them to the bowl.

  • Drain and pat dry the mozzarella balls, then add to the mixture.

  • Tear the basil leaves and scatter over the salad.

  • Drizzle olive oil and balsamic vinegar evenly on top.

  • Sprinkle with salt and black pepper.

  • Gently toss to combine without crushing the ingredients.

  • Let sit for 10 minutes at room temperature before serving.
