Fiesta Lime Chicken with Avocado is a zesty Mexican-inspired dish featuring citrus-marinated grilled chicken topped with a fresh avocado mixture. It is bright, savory, and perfect for weeknight dinners or gatherings.
4 boneless skinless chicken breasts
1/4 cup fresh lime juice
2 tablespoons olive oil
3 cloves garlic minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon honey
1 cup shredded Monterey Jack cheese optional
2 ripe avocados diced
1/4 cup finely chopped red onion
1/2 cup diced tomatoes
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice for topping
Pinch of salt
In a bowl whisk together lime juice olive oil garlic chili powder cumin smoked paprika salt pepper and honey.
Place chicken in a dish and pour marinade over it. Cover and refrigerate for 30 minutes to 4 hours.
Preheat grill or skillet to medium-high heat and lightly oil the surface.
Remove chicken from marinade and cook for 6 to 7 minutes per side until internal temperature reaches 165 degrees Fahrenheit.
